By now you all know how much I love the Rocco Dispirito cookbook I purchased. Here we are 4 weeks later and I’ve lost 5 1/2 pounds! Yesterday I decided to try making the banana walnut muffins and they were (not surprisingly) delicious! Who knew muffins could taste so good without all the sugar and calories?! If you want to try making these muffins too I’ve posted the recipe below.

INGREDIENTS:

2 cups whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

4 packets of powdered stevia

1/2 tsp salt

3/4 cup skim milk

1/4 agave nectar

2 bananas mashed

1/4 cup canola oil

1 tsp vanilla extract

1 tsp banana extract

1/2 cup liquid egg substitute

small bag of walnut pieces

DIRECTIONS: Preheat the oven to 350 and spray a 12 cup muffin tin with Pam. I found that combining all of the dry ingredients and then the wet ingredients was easier to do. Make sure to use a handheld mixer as you go, so the ingredients will mix easily. Then spoon the mixture into the 12 cup muffin tin. Once you are done sprinkle the walnut pieces on top. The recipe suggested walnut halves, but I like the pieces better so I can put more. Bake for 15-18 minutes. Enjoy!
